Here piggy, piggy, piggy!
This recipe is from eons ago... I found it when cleaning up
recently, scrawled on the front of an old green-bar printout of a Pascal
compilation attempt from 1981! I'm saving the recipe online and tossing out
the old paper. :)
BBQ sauce for Pork
1/2 large onion, chopped
1 clove garlic, crushed
Olive oil
1 cup ketchup
1/2 cup water
1/4 cup dark brown sugar, firmly packed
3 tbls Worchestershire sauce
2 tspns. prepared mustard
1 tspn thyme
1 lemon, thinly sliced
Sautee the onions and garlic in olive oil until they are soft and
transparent. Then add all the other ingredients and simmer for 5 minutes.
The "white" of the lemon rind will gradually add a bitterbite to the sauce
over a period of a couple of hours. Taste it occasionally and remove the
lemon when the balance of sweet/tangy and bitter is to your liking. If the
prepared ingredients you choose have little or no salt, you might find you'd
like to add a little salt at this point.
Mix the sauce with a shredded pork roast in proportions that yield the
consistency you want and simmer for another 5 minutes to marry the flavors.
